On November 1st in Los Angeles the high was 86. So, despite the Christmas decorations currently up in my apartment (I start early - I'm one of Those) and the feverish development of holiday marshmallow recipes, it doesn't seem all that crazy to leave you with one final summer recipe.
I tried creating a bunch of these experimental cereal bars for a party Mallow & Hop catered over the weekend: Cherry Beer + Cocoa Krispies + Dried Cherries; Passion Fruit + Cap'N Crunch + Butterscotch Chips; Apricot IPA + Spicy Pub Mix (barely a 'cereal' bar but certainly interesting!). This one was the best by far - ready?
- 3 cups Special K with berries (lightly crushed)
- 5 oz Mallow & Hop Strawberry Lemonade Marshmallows (~1 package)
- 1.5 Tbsp unsalted butter
- Handful of mini white chocolate chips (optional; not pictured)
Line an 8x8" pan with parchment paper. Melt butter and marshmallows in a microwave safe bowl, about 1 minute on high. Stir to ensure that all of the butter is fully melted and incorporated. Add cereal and mix until there is no "dry" cereal left, then pour into the lined pan. An offset spatula may be helpful in patting down the mixture so that it is packed and even.
Place in the fridge to set for at least an hour, Cut into 2x2" pieces and serve!
